Dear teachers,
“I did 20 lengths of the pool today. I haven't swum that far since I was at school.”
Please tell me if “that” is a pronoun? Does it replace the whole sentence “I did 20 lengths of the pool”?
What about “far since”? Does it mean “far into the time when …”

You've mixed things up.

that far = so far/remotely, at such a distance, to such a remote place

"that" is adverb here

Yes, 'that' can be an adverb, and it is in this sentence. It modifies 'far," which is another adverb.
