would you please advise me if we can use the prefix "EX" before any noun, or we can only use it with People .
I can say Ex girlfriend, but can I say Ex exam or Ex job, ...? |

An interesting question, Humam!
 That prefix is reserved for people. For something like a job, we'll use the adjectives former or previous. |
