Can I say,

(a) The man turned around / back when he heard
someone calling him.

(b) The man turned around / back when he
realised John was calling him.

(c) Just as the man went out of the restaurant,
he heard someone calling him. He turned
back / around.

To turn around simply means to make a 180-degree turn in the same spot.

To turn back means to turn around and then start walking towards where you came from.

So both can be used in your sentences, as long as you understand there's a difference in their meanings.
