a) Mohamed told me that they were going to the museum that night.
b) Mohamed told me that they would be going to the museum that night.

I think “b” is ok.

No, 'a' is the correct reported speech. The direct speech uses 'are going to', so when you apply time backshift in reported speech, 'are going to' should be 'were going to'.
