Hi, Gilbert—I agree with you that it is better to say that your tomatoes have turned red rather than that they have turned to red.

The grammatical difference, as I analyze it, is that "red" is an adjective in "turned red" but a noun in "turned to red."

I think that "turned to red" would work in a case like this, where "red" means "the color red": "The paint has turned to red."
